Professor Dexter was being cavalier when he said no one else was going to use the data. Arguably, if he was convinced of that, then no journal space should have been wasted on Table 1 in the first place. A researcher trying to reproduce the experiment described in the paper (or at least trying to understand it better) might try to work from the raw data through the calculations. Someone with an alternate interpretation of the experiment might also want to use the raw data. The error should be corrected in print.
If Professor Dexter continues to refuse to cooperate, Professor Chelsea may need to take care of it herself. A logical first step would be to consult the journal editor to determine what the proper protocol is. As she proceeds with the process, the collaboration with Professor Dexter may well come to an end, but that may be for the better since they clearly have different publication standards.
